Overfed and Undernourished

About every week or ten days I realize there is no brown rice ready to anchor a meal, so I end up making pasta with sauce to fill fhe void. Even though I saute fresh garlic, onions, and other vegetables, the bulk of meal is made from refined and processed food products, namely the pasta and the sauce.

What is interesting is that I always overeat pasta with sauce and I never overeat when my meal is based on brown rice.

The reason finally dawned on me; the processed meal has far fewer nutrients, therefore I overeat because my body is seeking the nutrition I normally get from my brown rice based meals. This is small scale example of what is happening on a national level in the United States, as people overeat in a failed attempt to gain the nourishment that is not present in today’s processed meals. This idea is common knowledge among health and nutrition experts. Just google “Malnutrition and Obesity” and you will see over a million entries.

The heart breaking reality is that the children below are in fact opposite sides of the same coin with respect to malnutrition. Malnutrition is devastating in either manifestation and robs us all of unbelievable human potential.

You’re right about the body seeking its nutrition from overeating – I’ve read that in several definitive sources, including Michael Pollan and Lierre Keith. So it’s not just an unproved intuition on your part.

Yours is such a crystal clear view of the situation I’ll use it instead of trying to make the argument myself if I may.
